Ingredients: a.. 2 pounds boneless lamb, cut in 1-inch pieces b.. 2 cups sliced potatoes c.. 1 cup converted rice d.. 2 onions, sliced e.. 1 teaspoon salt f.. 1/2 teaspoon pepper g.. 1 teaspoon ground cumin h.. 1 pound zucchini, sliced i.. 1 12-oz pkg artichoke hearts, thawed,halved j.. 2 cups diced tomatoes Preparation: Place sliced potatoes in the bottom of a slow cooker. _layer_ remaining ingredients on top. Pour 2 cups of water (or broth) over all. Cover and cook on low 8 to 10 hours.
